There seems to be some problem at Wakerswood Factory in St Ann , Jamaica. This company was one of the pioneers in bottling and distributing jerk seasoning and other local Jamaican products original made my street vendors who wre selling jerk chicken and jerk pork. Its famous seasonings and products such as wakerswood jerk seasoning and sauces are known world wide, but now seems to be hard to get on a regular basis. What is happening?

Caribbean’s Food Ingredient Markets: Trinidad and Barbados

A Jewel of the Caribbean

The caribbean islands of Trinidad and Barbados claim the most medium- to large-scale processors of meats, fish, fruits, vegetables, pasta, bakery, confectionery, and dairy products. They also process and package convenience foods, edible oils, and fats.

Several factors drive the growth of food processing in Trinidad and Barbados — relatively high standards of living and education, increased exposure to other regions, more women in the workforce, the pursuit of a healthier society, and an increase in foreign direct investment.

Food processing is the largest non-energy manufacturing sector in the two-island republic of Trinidad and Tobago, contributing over 50 percent of total manufactured output. About 9,000 people are employed by 424 firms, accounting for approximately 3 percent of the total GDP (gross domestic product) of $13.7 billion. The islands also have 16 fish processing plants.

Barbados has 192 food processing firms, the largest employing manufacturing sector in the island. In 2005, food processing accounted for roughly 3 percent of the total island GDP of $3.1billion. The firms also account for 35.7 percent of the export earnings of Barbados.
These caribbean markets produce a greater percentage of caribbean foods including caribbean spices and caribbean seasoning of this region(editor)

It appears that the Caribbean market trend is moving into new territory farther south into some Central American countries. The most notable is Belize. While a relatively small market, Belize possesses several attributes that make it a favorable location for development. On one hand, it is both politically and economically stable. Perhaps more important to the tourism industry, Belize possesses a wide variety of attractions such as rain forests, Mayan ruins and world-class scuba diving. As a result, more and more tourists are heading for Belize and more and more resorts are being built to handle them.
The increased emphasis on tourism in Belize has not gone unnoticed by the U.S. wood industry. Trade statistics clearly show this. For example, in the first seven months of 1999, U.S. softwood lumber sales to Belize totaled $7,000. For that same period in 2000, sales stand at $2.8 million.
A similar trend is seen when examining sales of softwood plywood. Sales in the first seven months of 1999 totaled $861,000 and for the same period in 2000 they total $5.7 million. It’s uncertain whether this high volume of sales will continue, but all indications seem to point that way.
In addition, tourism is becoming more important in the economies of other Central American countries such as Guatemala, Panama and Costa Rica. Courtesy of fedworod.gov
